Chicken Skewers shouldn’t be reserved for summer only; we can easily make them all over the year in about 30 minutes on the stovetop. We have fantastic oven-roasted Chicken Skewers in our cookbook Epic 30-Minute Roasts, but these are cooked in a grill pan. First, we must marinate the chicken, then set it aside for a couple of minutes, and last but not least, we pan-fry it in the grill pan. Serve with baked potatoes or flatbread and some fresh veggies on the side. Quick, simple, and delicious.

How to make Marinated Chicken Skewers at home

Making Chicken Skewers at home is quick, simple, and effortless. We will need four wooden or metal skewers. We usually serve one skewer per person. You can find the whole recipe below; here's a quick overview of easier preparation.

  1. Cut the chicken into bigger pieces and add to a bowl.
  2. Season with spices, greek yogurt, garlic, lemon zest, and olive oil.
  3. Set aside for 15 minutes for the meat to marinate.
  4. In a pan, grill the meat until golden-brown.

METHOD

  • marinate the chicken

    Cut the chicken breast into 3cm (1-inch) pieces and add them to a bowl. Add yogurt, olive oil, diced garlic, spice mix, and lemon zest. Season with salt and pepper and stir to combine. Set aside 15 minutes, or place in the fridge, and keep chilled overnight.

    Tip
    If you can't find BAM Spices in your country, use a mixture of paprika powder, onion powder, basil, and rosemary.
  • pan-fry

    Grab four wooden or metal skewers. Make sure they fit into your pan. Thread a piece of chicken onto a skewer. Repeat until you use up all the skewers and chicken. Place a large grill pan over medium-high heat. Drizzle the skewers with oil and add to a pan. Pan-fry on each side for about 3 - 4 minutes or until they are cooked through and golden-brown outside, for about 12 - 16 minutes total. Turn a couple of times during cooking.
