Caprese Sandwich
We love sandwiches in all seasons, but in summer, we adore light, fresh, and delicious sandwiches. One of our favorite summer sandwich ingredients is a big juicy tomato. We love tomatoes in everything in the summer, so adding them to salads and sandwiches is a must. The inspiration for this sandwich came from Caprese salad. We love the classic tomato-mozzarella combination, which also works so well in a sandwich. The cherry on top, so to speak, is the homemade basil pesto or Pesto Genovese, which adds a fantastic Mediterranean note. So good!

Cut the bread in half lengthways and drizzle with oil. Place on a baking sheet lined with parchment paper and place in the preheated oven on the middle rack. Bake the bread for 10 minutes at 200 °C / 390 °F.

Sandwich
Spread pesto over the bottom of the toasted bread. Place mozzarella on top. And place tomato slices on top of the mozzarella. Season with salt to taste and drizzle with olive oil. Place the second half of the bread on top, cut into two or four pieces, and serve.
