Storing

We don't recommend storing this Caramelized Onion Grilled Cheese Sandwich. Serve it while it's still hot or warm. However, feel free to store the onion jam. This recipe makes enough onion jam for four sandwiches, and you can place it in an airtight container and store it in the fridge for up to 7 days.

If you want to keep it even longer, you must pasteurize it. You can do that by filling the hot canning jars with jam. Wrap the jars with a wet kitchen towel, so the jars aren't touching. Place them into a preheated oven (at 85 °C / 185 °F) for 20 minutes. This way, the jam will be pasteurized. Remove the onion jam from the oven, remove the wet kitchen towel, and wrap the jars into a dry kitchen towel. Set aside until the jam comes to room temperature slowly, then store in a fridge for up to 3 months.

  • Caramelized onion jam

    Add olive oil to a saucepan and place over medium-high heat. Add the onion cut into thin slices. Season with salt, thyme, and bay leaf. While stirring regularly, saute for 8 - 10 minutes or until the onion is soft and translucent.

    Add the sugar and honey. Reduce the heat, and cook for 6 - 8 minutes or until the sugar and onion caramelize and become golden brown. Add the balsamic vinegar and mustard. Cook over low heat for 3 - 4 minutes and remove from the heat.

    Spread the homemade onion jam over one slice of bread. Arrange the shredded cheese on top and cover it with another slice of bread. Spread the butter on top of the bread. Spread the rest of the butter on top of the bread while the grilled cheese is cooking. Turn the grilled cheese and cook for 3 minutes or until the cheese melts and the bottom is golden brown.
