Whipped Ricotta Tomato Toast
We could eat Whipped Ricotta Tomato Toast made with fresh tomatoes on repeat this summer. It’s the best treat for breakfast, brunch, or a quick snack, especially during the high tomato season when the tomatoes are juicy, delicious, and so full of flavor. This is probably the easiest recipe on the blog; in fact, it’s so easy that at first, we didn’t even want to share it, but it would be sad to miss out on such a fantastic summer sandwich.

toast the bread
Drizzle the bread with olive oil and toast in your toaster, oven, or in a skillet until beautifully golden brown.

whip the ricotta
In a bowl, whip the ricotta until creamy, smooth and whipped. Add the crushed garlic clove and olive oil. Season with salt and pepper to taste.

make the tomato toast
Spread the ricotta over the bread, arrange the tomato slices on top. Sprinkle with fresh basil. Optionally drizzle with additional olive oil and season with salt and pepper, if needed.
