On a deep plate, beat together an egg and whipping cream. Season with salt and pepper and set aside until needed. In a small bowl, stir together mayo and mustard. Optionally stir in the chili sauce (like Tabasco).

Cut off the edge of your bread. Spread two slices of bread with the mayonnaise and mustard sauce. Add two cheese slices and one ham slice over the two slices of bread.

Place the remaining empty slice of bread over the ham and cheese bread, then close the sandwich with the remaining ham and cheese bread topping side down. Press firmly with a spatula or cast-iron pan to flatten slightly. Dip the sandwich in the egg cream mixture to coat evenly. Let any excess mixture drip off.

Place a skillet over medium heat. Add the butter. Once it melts, add the sandwich. Cook until golden on both sides, and the cheese melts, for approximately 2 minutes per side.
