Drain the tuna and place it in a large bowl. Add the eggs, breadcrumbs, chopped onion, minced garlic, parsley, and season with mustard, ground paprika, and pepper. Mix everything into a uniform mixture.

Shape eight patties; you can use an ice cream scoop to help.

Place a pan over medium heat. Add the oil and the patties. Cook for 4–5 minutes on each side until golden brown. Transfer to a plate and serve with lemon wedges and your choice of side.
