tuna salad
In a large deep bowl, mix together the tuna, mayonnaise, mustard, celery, chives, onion, bell pepper, cucumber, scallion, and avocado. Season with lemon juice and stir with a fork. Finally, stir in the corn. Season to taste with salt and pepper, mix well, and set aside.

tuna wrap
Place three slices of cheese in the centre of one tortilla. Spread half of the tuna filling over the cheese, then roll it tightly to fully enclose the filling. Repeat the process with the second tortilla.

pan-fry and serve
Place a pan over medium heat. Without adding any fat, evenly toast the tortillas until they turn golden brown, about one minute on each side. Serve warm or cold.
