The chopped Italian sandwich is a technique where all the filling ingredients — meat, cheese, vegetables, herbs, and sauces — are chopped together on a cutting board and then mixed into one flavourful filling. The result is a sandwich where every single bite contains all the flavours at once.

Choose ingredients with different textures. For example: cooked ham and dry salami, or a fresh crunchy cucumber and a juicy tomato. When we chop everything together, we get a great texture that comes together really well as a whole. The pieces should be about half a centimeter in size.
The right choice of roll is half the success. For a chopped sandwich, you don’t need special bread — but it’s still worth paying attention. Store the filling without the bread in an airtight container in the refrigerator. It will keep for up to 24 hours, but bear in mind that by the next day it will be a little “wetter” because of the vegetables and mayonnaise. Mix well before using and, if needed, add a drop of olive oil.
Pro tip for making it ahead: To prepare a sandwich in advance for a trip, work, or a snack, chop the firmer ingredients in the evening — salami, cheese, onion — without mayonnaise, and store them separately. In the morning, add the fresh vegetables, mayonnaise, and oregano, mix, and assemble the sandwich.
