We are always looking for new frozen (healthy-ish) treats over the summer for our kids. Homemade ice cream is excellent, as are ice cream bars and popsicles, but we love simple recipes that take up to 15 minutes of active time to whip up during a busy week. This year fruit yogurt clusters had a real viral moment, so we had to try it ourselves too. We choose to make a banana yogurt cluster since our kids love bananas, and we always have them at home. Banana goes excellent with peanuts, so you can also find salted roasted peanuts and creamy butter in this recipe. This is such an effortless frozen treat, perfect for any summer day.

Storing and freezing

If you plan to serve these clusters within an hour or so of making them, store them in your fridge. If not, freeze them for later use.

METHOD

  • bananas

    Peel the bananas and cut them into small pieces. Your banana should be ripe but firm and not mushy.

    Add peanut butter and bananas to a bowl and stir well using a spatula. Add the maple syrup or honey and Greek yogurt. Stir gently to combine.

    Line a baking sheet with parchment paper and make 12 clusters with your spoon—place in the freezer for 2 - 3 hours or overnight.

  • cover with chocolate and serve

    Melt the chocolate with oil and stir in chopped peanuts. Take the clusters from the freezer and dip them in melted chocolate. Place back on the parchment paper and leave to set for 5 minutes, then serve. If you plan on doing them in about an hour, place them in the fridge; otherwise, store them in the freezer.
