Last week we posted a quiz “this or that” on Instagram. The idea was that you guys would pick the flavor for the next ice cream recipe, and we would do all the work for you so you can have a fabulous new recipe. We carefully included all of your answers, which were pretty straightforward. You choose biscuits, condensed milk, dark chocolate, and fruit. The only 50:50 was yogurt and cream, so we included both of them too. It can be tricky and definitely out of my comfort zone to leave a part of recipe development to someone else. Still, if this challenge has taught us anything, letting go can sometimes result in the most amazing delicious ice cream flavor. You will need 6 simple ingredients that are easily accessible, but if you feel like switching them up, you totally can - we offer some substitute ideas in the post too. Heavy Cream - Use your favorite heavy cream in this recipe. Whipping cream will work too.

Yogurt - Use full-fat yogurt or greek yogurt in this recipe. Feel free to substitute with sour cream.

Condensed milk - Condensed milk makes a delicious milky flavor, and adds just the right amount of sugar. Feel free to substitute with agave syrup.

Cherries - Creates a fantastic, slighly tart flavor. Use pitted sour cherries, cherries or black cherries. It's best that the cherries are frozen.

Chocolate - Use shaved or finely chopped chocolate. We love dark chocolate in this recipe.

Biscuits - Make sure that the cookies or biscuits aren't too sweet. It's also important that they are crunchy, so that they will remain crunchy and add a lovely texture to the ice cream. Biscuits like Amaretti, Zaletti or Biscotti are an amazing choice.

How to freeze this amazing Cherry Chocolate Ice Cream

Feel free to store this ice cream in the freezer for up to 3 months. To prevent ice crystals from forming and to avoid the unwanted smell, cover the ice cream with parchment paper and wrap the baking dish with clingfilm. Or use an airtight container to store your ice cream.

Who doesn’t want to scoop out the prettiest scoops of ice cream, perfectly round and beautiful? The best way to do that is this. Prepare a glass with hot water. Dip the ice cream scoop into the water, then scoop out ice cream. Before scooping another scoop of ice cream, always dip the ice cream spoon into the hot water to have a clean spoon.

  • ice cream

    Add cold heavy cream, yogurt, and condensed milk to a large bowl. Using an electric mixer, mix at medium speed for about 4 - 6 minutes or until the mixture is combined and soft peaks form.

    Feel free to use a stand mixer for this step.
  • Make the ice cream

    Add most of the sour cherries or cherries to the cream mixture along with the shaved chocolate and roughly chopped biscuits. Set about 2 tablespoons of the ingredients aside for the decorations. Gently stir everything together using a spatula, try to keep the volume.

  • freeze and serve

    Pour the ice cream mixture into a baking dish with a volume of 1.5 liters or approx. 20 cm x 10 cm x 10 cm or 8-inch x 4-inch x 4-inch in size. Sprinkle the saved ingredients on top and place the ice cream in the freezer for at least 4 - 6 hours or overnight. Before serving, place at room temperature for 5 - 10 minutes.
