Gosh, I am obsessed with this french toast recipe. The aroma wafting through the kitchen door while these Rabadanas are frying is out of this world. Sweet, gentle, and it brings me so much comfort. Sure, this is supposed to be winter-ish food, but we love this Brazilian French Toast in the summer for whatever reason. Especially when we can get our hands on the freshest berries or serve them with a generous scoop of vanilla ice cream. Traditionally, this Cinnamon French Toast is served on Christmas morning, so you can be sure it’s divine. I am talking double dose of cinnamon powder, soft interior, and a golden, deep-fried exterior.

Gosh, my mouth is watering as I am writing this blog post. This French Toast recipe is divine, and these are the main reasons why we love it:

How to make Rabanadas or Brazilian French Toast at home

The preparation of these Rabanadas won't take more than 20 minutes. It's quick and straightforward. In traditional recipes, we will find condensed milk as one of the ingredients. Still, we didn't use it, as it's not easily accessible here in Slovenia. Feel free to use half of the condensed milk and half of the milk, only milk, or only condensed milk in the recipe. The recipe instructions are below; here's a quick overview for easier preparation.

  1. In a deep baking dish, combine the ingredients for the coating
  2. Dip the bread into the liquid mixture
  3. Heat the oil in a pan and deep-fry the French Toast
  4. Place the French Toast on paper towels to get rid of any excess fat
  5. Coat in cinnamon sugar and serve.

These Rabanadas are great in the summertime with fresh berries or a generous scoop of vanilla ice cream. In colder months, serve them warm and coated with cinnamon sugar.

Storing

METHOD

  • make the egg mixture

    In a large baking dish combine milk, salt, cinnamon powder, and sugar. Beat with a whisk to combine.

  • soak the bread

    Cut the baguette into 2 cm (1-inch) slices. Soak the bread slices in the prepared egg mixture. Set aside for 2 minutes, then turn the bread and leave to soak for another 2 minutes per side.

  • fry the french toast

    Pour oil into a deep skillet and place over medium heat. Cook until the oil reaches 170 °C / 340 °F then carefully add the bread in a single layer. Deep-fry in two alternations. Deep-fry for 3 minutes, then turn the french toast and continue to fry for another 3 minutes. Transfer the French toast to a baking sheet lined with paper towels to get rid of any excess oil. Repeat the process with the rest of the oil.

  • coat in sugar and serve

    Make the sugar coating. In a bowl combine sugar and cinnamon powder. Coat the warm French toast in cinnamon sugar and serve as soon as possible.
