They say breakfast is the most important meal in the day. They also say that if you want to indulge, breakfast is the best time to do it. To us, breakfast is also the slowest meal of the day. Working from home allows us to enjoy breakfast every day, much more than lunch or dinner, which is usually super quick. Jernej always says that french toast has a special place in his heart. In his childhood french toast was a Saturday or Sunday special and on Wednesday he couldn’t wait for the weekend and the delicious savory french toast. It was impossible to get bored of it. It was just so good. So at home, his mom or dad prepared it the savory route, just plain old savory french toast, without any toppings. That french toast was the definition of how good simple food can be.

I don’t want to be unfair to anyone, but this whole combination, golden french toast, delicious crispy bacon, super delicious but super spicy hot sauce and then fried egg. Honestly such a proper manly breakfast to me. However, french toast is such a simple dish and such a great way to use old, stale white brioche or milk bread. The outside of this wonderful french toast is nice, golden and crunchy, and the inside is still nice and soft. We really recommend using fluffy white bread for this recipe, as it’s the softest and creates that ahhmazing fluffy texture we all love.

You can sprinkle this french toast with icing sugar and ground cinnamon or serve it with rhubarb and pistachios (sweet option) Or as we are serving it here (savory option) you can go full out and serve it with crispy bacon and a nice, homemade, gourmet hot sauce.

This sauce isn’t just randomly called HOT sauce, because this sauce really is hot, spicy, but also so delicious, that you cannot stop eating it. Gosh. You can make this hot sauce a few days ahead and even serve it with pork or chicken roast or even in a delicious beef burger. Store in a jar in a fridge for up to three weeks.

METHOD

  • Hot sauce

Place a small saucepan with lard (or olive oil) over medium- high heat. Add brown sugar, smoked paprika powder, diced onion and thinly sliced cloves of garlic. Stir to combine, then add chopped chilli and chopped sun-dried tomatoes. Stir to combine, lower the heat and cook for another 2 minutes.

  • Hot sauce

Add dijon mustard, bay leaf and homemade tomato puree (or store-bought passata), balsamic vinegar, Worchester sauce and 150 ml (2/3 cup) of water. Cook for about 10 minutes over medium heat (low simmer).

  • French toast and bacon

Combine the eggs, milk and whipping cream in a shallow wide dish. Season with salt and pepper. Place a skillet over medium - high heat. Add vegetable oil and butter to the hot skillet. Dip each slice of bread into the egg mixture allowing them to soak on both sides. Gently prick one side of the bread with a fork then transfer each piece to the hot skillet and cook until golden brown on both sides, for about 3 - 4 minutes per side.

  • Serve

Transfer the french toast to a plate covered with kitchen towels. Divide the french toast between four plates and serve with crispy fried bacon, a teaspoon of homemade hot sauce and fried egg. Enjoy.
