METHOD

  • pan-fry the hake

    Pat dry the hake with paper towels. Add flour to a large plate and season with a pinch of salt. Coat each hake fillet in flour, then shake off any excess flour and transfer to a clean place. Place a large skillet over medium-high heat. When the skillet is hot, add the oil and hake fillets. Pan-fry for 2 minutes on each side, then transfer to a clean plate.

    Add butter to the same pan where you pan-fried the hake. Cut the onion into very thin slices. When the butter melts, add the onion and cook over low heat for 6 - 8 minutes or until the onion is soft and tender. Pour in the wine, increase the heat and cook for about 4 minutes for the alcohol to evaporate. Add the capers and thinly sliced garlic. Season with salt and pepper. Stir well, add the fish and cook for 3 - 4 minutes.
