I follow this recipe from Jernej, and they are exactly like I want them to be - creamy, not too dry, and not too runny or undercooked.

Tips and Tricks for the best Cheesy Scrambled Eggs

Sure, we only need three ingredients (+ salt, and pepper) for this recipe, but we still like to follow a few tips and tricks that help make this Cheesy Scrambled Eggs recipe foolproof. 

  1. Whisk the eggs in a bowl, without salt, and pepper. We will season the eggs in the end, right before serving. The saltiness will come from adding the cheese, and this way we can control the flavor and seasoning better. 
  2. Add the shredded cheese only when the eggs are already slightly cooked. This way we ensure that the eggs will stay perfectly scrambly, and the cheese will melt beautifully.
  3. Use a non-stick pan, to prevent sticking and overcooking the eggs.
  4. Watch the heat. The heat should never be high when making scrambled eggs. When in doubt, lower the heat.
  5. Use unsalted butter, not oil. Butter makes the eggs extra creamy, custardy, and delicious. 
  6. Use a rubber spatula for folding the eggs. It's so much easier to make longer strokes with a rubber spatula.
  7. Serve the eggs immediately to ensure the best texture and flavor, or use them in sandwiches, wraps.

    In a bowl, whisk together the eggs using a fork. Don't season with salt or pepper. Place a non-stick pan over medium-low heat. Add the butter, and let it melt.

  • Cheesy Scrambled Eggs

    Pour the eggs into the pan, increase the heat to medium and shake the pan a few times. After about 15 seconds start pushing the rubber spatula from the sides of the pan to the center of the pan, folding the eggs from time to time. This will take about 30 - 60 seconds. Spread the shredded cheese over the eggs and continue to cook on low heat until the cheese melts and the eggs are creamy and soft. Gently fold from time to time, but as soon as the cheese starts to melt, stop stirring and remove from the heat. This should not take more than 20 seconds. Season to taste with salt and pepper, and serve as soon as possible.
