When I was a kid, my mum and dad used to always take my brother and myself to lunch after getting back to Slovenia from vacation at the seaside in Croatia. Each year we would dine at the same place, and I would always order the same thing: Creamy Mushroom Chicken. It’s such a classic, simple and tasty dish. A dish, that deserves a place on the blog. Make it as a quick midweek lunch or dinner, or serve it for Sunday lunch or dinner. It’s a tasty crowd-pleaser and full of mushroom flavor.

A classic dish, that is somehow best in the autumn. Probably because we spend a bit more time in the forest, foraging mushrooms. This simple chicken recipe is:

HOW TO MAKE CREAMY MUSHROOM CHICKEN

It's so easy and simple:

  1. Soak the dried mushrooms in hot water
  2. Season the chicken breasts and sear in a skillet
  3. Roast the chicken in the oven for a few minutes
  4. Make the mushroom sauce
  5. Add the chicken to the mushroom sauce and cook
  6. Serve with your favorite side and devour

Creamy Mushroom Sauce for Chicken

This homemade mushroom sauce is absolutely amazing. It's made without any artificial flavoring, starch or flour. You won't need many ingredients, but they are all important. Especially these:

Fresh Mushrooms - Use fresh or frozen mushrooms. If you are using frozen mushrooms, then you will need to cook them for 10 minutes, instead of 2 minutes. You can use mixed mushrooms like Porcini, Portobello, Shiitake or other.

Dried Mushrooms - They are full of flavor and give a rich mushroom aroma to the dish.

Sweet Dessert Wine - It's a must in this recipe! Sadly, the flavor of the dish won't be the same without a bit of sweet dessert wine. We used Madeira wine in this recipe, but others like Marsala wine or Porto wine will work too.

How to clean mushrooms

We need to clean fresh mushrooms before using them. Don't clean your fresh mushrooms by washing them under running water for more than 3 seconds. Rather clean them with a small knife or even better, using a cheap, fresh toothbrush. Using a toothbrush, simply brush the dirt off.

METHOD

  • dried mushrooms

    Soak dried mushrooms in hot boiling water. Stir to combine and set aside until needed.

  • Chicken breast

    Pat dry the chicken breasts and season generously with salt and pepper. Place an oven-safe skillet over medium-high heat. Add the olive oil to a very hot skillet, then add in the chicken breasts, skin side down. Cook for about 3 - 4 minutes on each side. Place the skillet with the chicken in the preheated oven and roast for 10 - 12 minutes at 230°C / 450°F or 210°C / 410°F if you are using a convection oven.

    Tip
    You can use skinless chicken breasts as well.
    Pierce the chicken breast in the thickest part. After roasting the temperature of the chicken should be around 68°C - 70°C or 160°F. Roasting time is for 250g / 9-oz chicken breast. Adjust roasting time if needed.
  • Mushroom Sauce

    Remove the skillet with chicken breasts from the oven. Carefully transfer the roasted chicken breasts to a large plate. Don't forget all the remaining juices. Place the same skillet back over medium-high heat. Add butter, diced shallots or onion, and diced garlic. Sauté for 2 - 3 minutes, stirring occasionally. Add thinly sliced fresh mushrooms and a sprig of thyme. Cook for 2 minutes. If you are using frozen mushrooms, increase the cooking time to 10 minutes. Add the Madeira wine (or Marsala or Port wine), stir to combine. Add the soaked dried mushrooms and remaining water from soaking the mushrooms. Cook for another 2 - 3 minutes, stirring occasionally.

  • Creamy Mushroom Chicken

    Pour the heavy cream to the mushroom sauce. Stir to combine, reduce the heat, add the chicken breasts with all the juices and cook for 5 minutes or until the sauce is creamy and delicious. Season to taste with salt and pepper. Slice the chicken breasts and serve immediately with mushroom sauce.
