METHOD

  • dressing

    For the dressing, mix all the ingredients in a bowl (olive oil, balsamic vinegar, mustard, freshly squeezed orange juice). Season with salt and pepper to taste and shake well. Set aside until ready to use.

  • salad

    In a large bowl, mix both shredded cabbages, thinly sliced cucumber, drained corn, grated carrots, cranberries, chopped peanuts, and parsley and mint. Pour over the dressing and mix well. Serve as a side dish.
