Beef Skillet Enchiladas

Beef Skillet Enchiladas is a delicious Mexican-inspired dish. Make it under one hour in one skillet using tortillas, beef sauce, and cheese.

We are huge Mexican, Tex-Mex, and South American culinary fans in our home. If we could, we would jump on a plane and fly to Mexico yearly to try their excellent food. It’s colorful, delicious, and so simply prepared; we love it. Today we’re sharing a Mexican or Tex-Mex-inspired dish, Beef Skillet Enchiladas. We created layers using beef sauce, tortillas, and cheese. This is a family favorite in our home, as it’s super delicious, effortless to make, and freezer-friendly.

Essential ingredients

These ingredients are easily accessible and make delicious Layered Beef Enchiladas.

Ground meat - use ground beef or a mixture of ground beef (80%) and ground pork (20%).

Taco seasoning - we used store-bought taco seasoning in this recipe. However, you can easily make the seasoning at home. Mix 1/2 tsp ground cumin, 1 tsp paprika powder, 1/2 tsp oregano, 1/2 tsp dried coriander, and 1/2 tsp garlic powder.

Tomato sauce - diced tomatoes are perfect in this recipe as they become soft when cooking and add a lovely texture and acidity.

Jalapeños - Adds some spiciness and character.

Cheese - We used Scamorza cheese that melts beautifully. Feel free to use Mozzarella or Edam as a substitute.

Coriander/cilantro - it's optional but adds a lovely freshness.

What to serve with Beef Skillet Enchiladas

Instead of wrapping the tortillas or tightly rolling them, we made a layered enchilada. You can either make it in a skillet or a casserole. You can easily serve it as it is, but we love these ingredients that elevate the dish.

Storing and freezing

There are two ways to store these delicious Beef Skillet Enchiladas.

Keep the chilled Beef Skillet Enchiladas in in an airtight container, in the fridge, for up to 3 days. Before serving, reheat in the microwave oven, in an oven, or using a skillet.

Feel free to freeze these Enchiladas too. Place the chilled enchiladas in a freezer bag or a freezer-friendly container and place it in the freezer for up to 2 months. Before serving, defrost at room temperature (or in the fridge overnight), then reheat in the microwave oven, in an oven, or using a skillet.

METHOD

  • make the beef sauce

    Place a 20-cm (8-inch) cast iron (oven-proofed) skillet over low heat. Add olive oil, diced onion, and diced pepper. Cook for 5 minutes, then add the meat. Increase the heat and cook for 5 minutes, stirring occasionally. Add the minced garlic, taco seasoning, diced tomatoes, tomato sauce, water (or stock), corn, beans, and jalapenos. Season with salt and pepper and cook over medium heat for 10 minutes.

    Place a rack in the middle of the oven and preheat it to 200 °C / 400 °F.

  • skillet enchiladas

    Leave three tablespoons of the sauce in the skillet, and transfer the rest to a large plate. Place a tortilla on top of the sauce in the skillet. Add four tablespoons of the beef sauce and two tablespoons of shredded cheese. Set about 4 tablespoons of shredded cheese aside for the final layer. Repeat the process until you use all the ingredients. When you place the last tortilla on top, spread the sour cream on top and sprinkle with the remaining cheese.

  • bake and serve

    Place the Beef Skillet Enchiladas in the preheated oven. Bake for 20 minutes at  200 °C / 400 °F. Before serving, sprinkle with chopped coriander. Cut into six pieces and serve. Optionally serve with sour cream, Guacamole, and Pico de Gallo.
