METHOD

  • heat the oil

    Place a rack in the middle of the oven and preheat the oven to 220°C / 425°F. Pour the oil into a deep 20 cm × 25 cm (8-inch × 10-inch) baking dish. Once the oven is preheated, place the baking dish with the oil in the oven and heat for 8–10 minutes. Handle the hot oil and baking dish with care, as both will be extremely hot.

  • prepare the batter

    Add the flour, milk, eggs, spices, and herbs to a blender and blend until smooth. Alternatively, use an immersion blender. Carefully remove the baking dish with the hot oil from the oven and place it on the worktop. Arrange the meat in the oil, then pour the batter around it.

  • add the veggies and bake

    Add any vegetables you like, such as sliced courgette or tomatoes. Return the dish to the oven and place it on the upper rack. Bake for 20–30 minutes at 220°C / 425°F, or until the edges are golden brown and crisp. Do not open the oven during baking, as this may cause the pancake to collapse.

    Serve with your favorite salad, such as Panzanella, and a sauce of your choice. Finish with a sprinkling of finely chopped fresh herbs.
