Orange Glazed Carrots
Orange Glazed Carrots, mmm, you are such a treat. Bursting with orange, citrus flavor and full of Vitamin A and Vitamin C, which is exactly what we need these cold winter days. Would you agree that sometimes side dishes are overlooked? We always take the time to do the research for a great starter, because the first impression matters, of course. We always give our all to make the main dish, the centerpiece, the showstopper. Desserts? We always have a great recipe up our sleeves. Side dish? Baked potato, steamed rice? Sure. But how about something new, something orange, citrusy and incredibly easy to make? If that's a big yet I am hearing, then you will love this new recipe. You will need four simple ingredients: carrots, orange, butter, and olive oil. Bake wrapped in a baking paper for 50 minutes, then serve. The aroma that fills your kitchen is divine, citrusy, tangy. The carrots are crunchy, yet cooked and tasty. Sprinkle with some thyme and enjoy this wintery wonder, a beautiful and easy side dish.

Carrots - Use medium size carrots or baby carrots in this recipe. Or cut the big carrots in half, lengthways.

Orange - Orange creates a lovely, citrusy aroma and these carrots wouldn't be the same without the addition of orange.

Butter - Butter creates an amazing emulsion and adds a nice, buttery flavor plus a wonderful, velvety sauce.

  • Preparation

First, rinse and peel the carrots. You can use medium size or small, baby carrots in this recipe. Preheat your oven to 210 °C / 410 °F. Line a baking dish with two layers of baking paper. Cut the orange in half. Slice one half of the orange into thin slices and freshly squeeze the other half of the orange.

  • Toss everything together

Place the carrots on top of the baking paper. Add the orange slices, butter, olive oil, salt, pepper and 1 tablespoon of thyme. Toss everything together to combine. Fold the paper over the carrots and double-fold each edge to make a sealed packet leaving a gap at the top to pour in the orange juice.

  • Bake and Serve

Place the baking dish with the carrots in a preheated oven and bake for 50 minutes at 210 °C / 410 °F. Once baked, carefully remove the baking paper, transfer the carrots with all the juices and orange slices to a nice serving dish. Optionally sprinkle with some additional thyme and serve. Store in a fridge for up to a week.
