Storing

We prefer to make Pork Chop Suey fresh, as it only takes 20 minutes.

However, if we have any leftovers, they can be stored in the refrigerator. Once cooled, place the dish in a sealed container and keep it in the fridge for up to 3 days. Reheat thoroughly before serving.

METHOD

    Slice the pork loin into very thin pieces. Place them in a bowl and add baking soda, cornstarch, oyster sauce, and peanut (or other vegetable) oil. Mix well and set aside for 10 minutes.

    In a small bowl, mix together the oyster sauce, soy sauce, freshly squeezed orange juice, cornstarch, sugar, and rice vinegar. Set aside until ready to use.

    Slice the bok choy or Chinese cabbage into thin strips. Peel the onion and slice it thinly. Clean the bell pepper and cut it into small pieces, about 2 x 2 cm in size. Finely chop the garlic. Drain the Chop Suey vegetables from the jar.

    Place a wok or another deep pan over high heat. Add the oil and the marinated meat. Stir-fry for 2–3 minutes until golden brown, then transfer to a plate. In the same pan, add all the vegetables and stir-fry for 2 minutes. Then return the meat to the pan and mix well with the sauce until everything is coated in a silky sauce. Cook for another minute, then divide onto plates and serve with rice.
