Essential ingredients
These are the essential ingredients you will need for this recipe.
Scallions - Spring onion or scallions make this recipe greener, but the most important thing is that they are slightly sweet, fresh, and light.
Ginger - Adds some gentle spiciness. Always use fresh ginger, peeled and minced.
Sugar - We're using white sugar in this recipe. It makes the dish slightly sweeter but not sweet. Feel free to use coconut sugar or cane sugar too.
Soy Sauce - Light soy sauce with low-sodium is the way to go. It's not too salty, yet it delivers that umami flavor. If you're using dark soy sauce, make sure only to use about 1 tbsp of sauce and two tablespoons of water.
Egg - is a delicious source of protein that keeps us full for hours.
Vegeta - we're using the new Vegeta Natur paste in this recipe. If you can't find it in your country, feel free to use light miso paste.
Noodles - We usually use egg noodles (feel free to make them at home) or ramen noodles. Rice noodles will work great too.
Oil - We used canola oil in this recipe. We don't reccomend using olive oil, as it has too much flavor.
Storing
Since this is a 10-minute recipe, we recommend making it fresh.
However, feel free to serve any leftover ginger scallion ramen noodles in an airtight container in the fridge for up to a day.
