Feel free to cook the Grattoni or Grated Egg Pasta immediately, or store it later by drying it.

For drying, spread the grated pasta in a single layer over a large baking sheet. Cover with a kitchen towel and leave to dry at room temperature for two days. Then, transfer to a paper bag or airtight container or box. Keep in a dark, dry place in your pantry for up to 2 months—Cook before using.

METHOD

    In a bowl, knead together flour, semolina, and egg. If necessary, add a tablespoon or two of water to get a smooth dough. Cover the bowl with clingfilm or kitchen cloth, then set aside for 15 minutes for the dough to relax.
