  2. Spread tortilla chips and shredded chicken over the baking sheet.
  3. Spread the chicken mixture over the first layer of cheese.
  4. Sprinkle with the rest of the cheese.

Nachos is an excellent snack or appetizer originating from Mexico. It's a beautiful dish prepared with tortilla chips and melted cheese. Over the years, the Nachos recipe evolved and is different in different regions in the world. In this recipe, we used corn tortilla chips topped with chicken, corn, tomato passata, beans, and, of course, lots of cheese. This treat is perfect for celebrations, large or small gatherings, or movie-night snacking.

It's best to serve these Chicken Nachos warm or at room temperature. We don't recommend storing them for longer since the melted cheese texture will change completely. If you still happen to have any portions left, store them at room temperature, covered, for up to a day.

  • preparation

    Place a rack in the middle of the oven then preheat it to 200 °C / 390 °F. Get a 20 cm x 30 cm (8-inch x 12-inch) baking sheet ready.

  • chicken topping

    Combine shredded chicken, drained sweet corn, drained beans, tomato passata, and roughly chopped onion in a bowl. Season with salt, pepper, oregano, coriander, and olive oil. Stir to combine and optionally add chili if you like spicy.

  • nachos

    Arrange the tortilla chips on top of the baking sheet. Sprinkle half of the shredded cheese on top, then spread the chicken topping on top of the cheese. Finish with the rest of the cheese.

  • bake and serve

    Place a baking sheet with the nachos into a preheated oven. Bake for 10 minutes at 200 °C / 390 °F. Optionally serve with sliced avocado, diced onion, and diced coriander.
