Don't you just love summer and all the produce that's in season right now? Oh gosh, it's just the best. The tomatoes are juicy, sweet and full of flavor and so are eggplants. This year there are more than 30 eggplants in our garden, so imagine our happiness. There are so many dishes to try. In summer, we, of course, like to keep it as simple as possible, preferably with not too many ingredients and different techniques. These grilled eggplants (or aubergines) are as simple as it gets. You cut each eggplant on steaks. Grill them on each side for a couple of minutes, then add tomato sauce, gremolata sauce (garlic, parsley and oil sauce) and top with Mozzarella cheese. It's so simple, made incredibly fast and just beyond delicious. Full of flavor, yet light and fresh. Perfect for summer.

They really are. These Grilled or Roasted Eggplant Steaks are prepared super quick, which makes them the perfect midweek healthy lunch or dinner. They are grilled on the stove, but you can use an outdoor (or indoor) grill as well. Top grilled eggplants with homemade tomato sauce, some Gremolata sauce, and Mozzarella cheese. The finished dish is incredibly full of flavor, aromatic and truly celebrates delicious summer produce. We especially love it because:

Ingredients

There aren't many ingredients needed for this recipe which actually makes it perfect for hot summer days. 

Tomatoes - If you have delicious, juicy tomatoes, definitely make homemade tomato sauce. It makes this dish so much better than if you are using store-bought tomato sauce + it's made in just 10 minutes, so no excuses.

Gremolata sauceGremolata is an Italian cold sauce traditionally made of garlic, parsley and lemon zest. It adds a much-needed acidity to this dish and it takes it to another level. So good.

Eggplants - Use fresh eggplants (or aubergines). It's important to cut the eggplants as even as possible for easier grilling.

MozzarellaMozzarella cheese melts perfectly and it's so good in this recipe. You can use other cheeses that melt well as well.

How to grill eggplant on stove

First we need to prepare the eggplants. Cut the eggplants on about 2 cm or 1-inch thick steaks. Season with salt, pepper, and drizzle with 1 tablespoon of olive oil. Transfer the steaks to a smoking hot grill pan (you don't need to use any oil), Grill for about 2 minutes on each side. Top with the tomato sauce, Gremolata sauce, and cheese. Serve.

METHOD

  • Homemade tomato sauce

    Place a saucepan over medium-high heat. Add 2 tablespoons of olive oil, diced onion, and diced garlic. Cook for about 2 - 3 minutes. Add diced tomatoes and season with salt, pepper, and vinegar. Cook for another 10 - 15 minutes or until the sauce is thick and tomatoes are cooked.

  • Grill the eggplants

    Place a grill pan over high heat (or use an outdoor grill). Cut the eggplants on about 2 cm or 1-inch thick steaks. Season with salt, pepper, and drizzle with 1 tablespoon of olive oil. Transfer the steaks to a smoking hot grill pan (you don't need to use any oil), Grill for about 2 - 4 minutes on each side, depending on the size.

  • Grilled Eggplant Steaks with Mozzarella Cheese and Tomato Sauce

    Top each grilled eggplant steak with 1 or 2 tablespoons of your homemade tomato sauce and about one teaspoon of the Gremolata sauce. To finish it off, place a slice of Mozzarella cheese on each steak. Cover with a lid and cook until the Mozzarella cheese has melted, for approximately 3 - 4 minutes. Serve immediately. Optionally sprinkle with fresh chopped parsley, chopped walnuts or drizzle with Gremolata sauce. Enjoy.
