I (Maja) grew up eating this dish. My Austrian grandma made it all the time, and she called it “Zigeuner Schnitzel,” which translates to Gypsy Schnitzel. It’s also called Balkan Schnitzel. It has many names, some controversial, so we will call it Pork Shoulder Steak with Pepper Sauce. The meat in this recipe is tender juicy, and there’s enough sauce for each bite. The sauce contains colorful bell peppers, onions, gherkins and tomatoes. They take about one hour to make, and we prefer making them over the weekend instead of during the week. Serve them with mashed potatoes, creamy polenta, gnocchi, or other side dish of your choosing.

For this recipe, we used easily accessible ingredients. They create a beautiful balance between sweet and sour; you can find them anywhere.

Meat - we tested this recipe with pork shoulder steaks and pork chops. Pork chops were better; they weren't as tender as we had hoped. On the other hand, pork shoulder steaks are juicy and tender, and they cook quickly.

Spices - Use a homemade spice mix for maximum flavor before searing the meat in a hot pan. We used paprika powder, garlic powder, oregano, caraway, sugar, pepper, and salt.

Vegetables - We used a variety of vegetables in this dish, which gives it freshness and lightness. The recipe includes onion, garlic, tomatoes, and peppers. We love using colorful peppers for more flavor and color.

METHOD

    Pat dry the pork steaks and add to a bowl. Season with paprika powder, garlic powder, oregano, caraway, sugar, salt, and pepper. Rub the seasoning into the meat and set aside.

    Place a large pan over high heat. Add oil and half of the meat. Pan-fry for 2 - 3 minutes per side. Transfer to a plate and repeat with the rest of the meat.

    Peel the onion and cut it into slices. Remove the seeds from the peppers and cut into large pieces. Add to the pan (where you cooked the meat), and sauté for 6 - 8 minutes over low heat. Cut the tomato into small pieces. Add to the vegetables along with minced garlic, tomato paste, Tabasco sauce (optional), and gherkins (cut into small pieces). Stir to combine and cook for 6 - 8 minutes. Pour in canned diced tomatoes, pickling liquid, and water. Season with salt and pepper and stir. Cook for 6 minutes.

    Arrange the steaks over the vegetables. Don't forget those delicious juices from searing the meat. Gently press the steaks into the sauce to almost cover them. Cook over low heat for 12 - 15 minutes. The meat shouldn't boil.

    Divide the meat with the sauce between four plates and serve with your favorite side dish.
