One of the things I will remember most about being pregnant will be how much I craved and adored strawberries. I love them in any shape or form. Raw, straight from the garden. I love spreading homemade strawberry jam over toasted sourdough bread with butter, and I LOVE this simple strawberry crisp. It’s incredibly simple to make, and it’s even tastier. The strawberries are macerated, then baked. They release divine fruity juices that are perfect in combination with the crispy, golden-brown crumble - made without any oats. Serve it with the best vanilla ice cream and dig in, you will thank us later.

How to make Strawberry Crisp at home

Fruit crisps are one of the simplest yet most delicious desserts to make at home. Most of the prep is made in a baking dish, so you won't even need a lot of equipment. This is how we make it:

  1. Clean the strawberries and cut them in smaller chunks. Transfer to a baking dish and add cornstarch, vanilla, sugar, and lemon juice.
  2. In a bowl, stir to combine all the ingredients for the crisp topping: flour, sugar, butter, and vanilla.
  3. Spread the crisp over the strawberries in a baking dish.
  4. Transfer to a hot oven and bake for 45 - 50 minutes.
  5. Serve the Strawberry Crisp warm (or at room temperature) with a scoop vanilla ice cream.

How to store Strawberry Crisp

It's best to serve this easy Strawberry Crisp immediately. We love eating it warm or at room temperature with a scoop of cold vanilla bean ice cream. Store any possible leftovers in a fridge, covered, until the next day.

    Make the strawberry filling. Clean the strawberries and cut them in smaller chunks. Add to a round baking dish (approx. 24 cm or 10-inch). Sprinkle sugar over the strawberries and add the vanilla, cornstarch, and freshly squeezed lemon juice. Stir to combine and set aside for 10 minutes. Preheat the oven to 190 °C / 375 °F.

    Make the delicious crisp topping. In a bowl, stir to combine all-purpose flour, sugar, brown sugar, a pinch of salt, vanilla paste, and cold butter cut in small cubes. Using your fingertips, rub the butter into the flour mixture until there are no lumps or chunks of butter left and the mixture is crumbly. Spread the crisp with your hands evenly over the strawberries in the baking dish. Place the baking dish with the Strawberry Crisp on a sheet pan. Place in the preheated oven on the middle rack. Bake for 45 - 50 minutes at 190 °C / 375 °F.
