Apricot Compote is a simple dessert that can be easily preserved for cold months. The apricots are juicy and firm, tasty treat for kids and adults.

A couple of days ago we saw the first apricots in our local store. They are still firm and not overly ripe, which makes them perfect for a simple homemade apricot compote. True, they aren’t in full season yet, but we simply couldn’t resist them. Too often we forget about making apricot compote at home. It’s something we both grew up on, but somehow we don’t make it as often as we should in the summer. This is all going to change now because we plan on preserving about ten glasses of apricot compote for winter so that we can enjoy it throughout the year.

How to make a simple apricot compote

You can cook apricot compote in two ways, on a stove or in an oven.

First, clean the apricots, then make the sugar syrup. Continue by cooking the compote on a stove or in an oven:

On the stove - Making apricot compote on the stove takes less time, about 20 minutes. This method is excellent if you plan on using poached apricots in desserts or if you plan on serving the apricot compote right away. The apricots tend to overcook quicker, but they are also easier to peel.

In the oven- The preparation takes a bit longer, about 35 - 40 minutes. This method is perfect if you plan on preserving the apricot compote for longer, for months. The apricots remain firm, they cook evenly, but they are harder to peel (if you prefer to peel them, we usually don't).

What to serve with apricot compote

You don't really need to serve apricot compote with anything. It's a delicious dessert, breakfast or sweet snack. However, it also goes incredibly well with these sweet treats: 

How to preserve apricots for winter 

Preserve this simple compote for colder days by adding hot poached apricots into clean, sterilized jars. Pour the hot sugar syrup over them and seal tightly. Turn the jars upside down for 10 minutes to release any air. Wrap them in a kitchen towel and set aside for a few hours, until they cool completely. Store in a dark, cold place for up to 6 months.

METHOD

  • prepare the apricots

    Add apricots to a bowl and pour warm water over it to cover them. This will help get rid of any pesticides. Set aside for 15 minutes, then halve them and remove the kernels.

  • sugar syrup

    Add water (2 cups) and sugar into a saucepan. Crush the cardamom to release the seeds and add to the water and sugar mixture. Add the cinnamon stick and vanilla paste, stir to combine, and place over high heat. Bring to a boil, then simmer for 8 - 10 minutes for the syrup to thicken slightly.

  • make apricot compote in the oven (option 1)

    Preheat the oven to 165 °C / 330 °F. Add halved apricots to a deep dish. Cover with sugar syrup and place in the preheated oven on the middle rack. Bake for 35 - 40 minutes at 165 °C / 330 °F.

  • make apricot compote on the stove (option 2)

    If you plan on making apricot compote on the stove, add the apricots to the sugar syrup in the saucepan. Cut a circle out of the parchment paper that fits the saucepan. It will serve as a lid. Carefully place the circle over the apricots in the syrup to cover them. This way, the apricots will be covered evenly, which will help them cook evenly too. Cook for 10 minutes over low heat, then turn off the heat and let stand for 8 - 10 minutes. Before serving, discard the parchment paper.

  • serve

    Divide the apricot compote between six bowls. Serve it at room temperature or cold. Keep cooked apricot compote covered in an airtight container in the fridge for up to a week. If you plan on preserving them for longer, then follow the recipe in the blog post.
