Easy Shrimp Scampi with White Wine Tomato Sauce
This Easy Shrimp Scampi are a pretty classic dish here in Slovenia and neighbouring countries (Croatia, Italy). We call them Škampi na buzaro (hence the Busara sauce - wine, garlic and tomato sauce). The preparation is quick and incredibly easy.
HOW TO MAKE EASY SHRIMP SCAMPI
1. Place a skillet with olive oil, onion and parsley over medium-low heat.
2. Add garlic and shrimp scampi (you can use prawns or mussels too)
3. Add the wine (the alcohol will evaporate)
4. Add the tomatoes, breadcrumbs, and season with salt and pepper
5. Cook & Serve with parsley and white bread

INGREDIENTS
There are few ingredients, but they all play a crucial role.
Olive oil - Olive oil is essential in Mediterranean diet and can't be substituted in this recipe.
Onion & Garlic - Onion adds the sweetness and garlic adds an amazing aroma that goes amazingly well with seafood.
Parsley - For freshness.
Shrimp Scampi - Use fresh or frozen (defrosted) shrimp. Instead of shrimp scampi you can use prawns or mussels too, just make sure to adjust the cooking time.
White wine - Chardonnay or Pinot Grigio are great for this Shimp Scampi recipe.
Tomatoes - Use diced fresh tomatoes if they are in season, or use canned diced tomatoes if they aren't.
Breadcrumbs - They thicken the sauce and make it creamier. You can replace them with ground almonds (for gluten-free version) or leave them out.
How to peel and eat shrimp scampi
This is how you peel and eat shrimp:
1. Remove the head of the shimp scampi by snapping it downward. Discard the head
2. Peel off the shell by starting from the underside of the shrimp, where legs are attached to the body (photo 1)
3. Using your fingers, squeeze the tail together until you hear a crack (photo 1)
4. Using both of your thumb fingers peel the shell off (photo 2)
5. Remove the intenstins (optional) and enjoy your delicious shrimp
What to serve with Shrimp Scampi
