Place the all-purpose flour, baking powder, sugar, vanilla, and salt in a bowl and mix well. In a larger saucepan, add the water and butter. Once the mixture comes to a boil, stir in the dry ingredients and immediately remove from the heat. Mix with a spoon until everything comes together into a smooth, thick dough. Add the eggs one at a time, mixing with an electric mixer. Add the second egg only once the first is fully incorporated.

Prepare a piping bag fitted with a 1 cm star-shaped tip and fill it with the dough. Line a large baking tray with parchment paper and pipe the Christmas tree shapes onto it. Place the tray in the freezer for at least 2–3 hours, or overnight.

Pour oil for frying into a deep pan and heat it to 170–180°C (340–355°F). Once the oil is hot, add the churros. Fry 4–6 churros at a time to give them enough space to move and to prevent the oil from cooling down too much. Fry the churros for 3–4 minutes, or until they are evenly golden brown.
Remove the churros with a slotted spatula and place them on a wire rack lined with paper towels. Repeat the process until all the dough is used. -
serve
In a small bowl, mix together sugar and ground cinnamon. Roll the churros evenly in the mixture.
Optionally, you can mix the sugar with matcha to decorate the churros with green sugar for a festive touch. Serve warm.
