A few simple details make a big difference when preparing Baked Gnocchi with Beef Ragu. From properly browning the beef to getting the consistency of the sauce just right, these tips will help you achieve tender meat, flavorful ragu, and perfectly baked gnocchi every time.
- Sear the beef well – Avoid adding too much meat to the pot at once. If the pot is overcrowded, the beef will steam in its own juices instead of browning properly. Sear the beef cubes in two or more batches so they have enough space to develop a deep brown crust. This step creates caramelized flavors that make the sauce much richer, so we don’t recommend skipping it.
- Cook the ragu low and slow – Time is your friend when making beef ragu. Cooking over low heat allows tougher cuts of beef to slowly become tender and juicy. If the meat is still firm after two hours, simply continue cooking it a little longer.
- The sauce shouldn’t be too thin – Before transferring the ragu to the baking dish, the sauce should be rich and fairly thick. If there is too much liquid, uncover the pot for the last few minutes of cooking and let some of it evaporate. This will keep the baked gnocchi juicy rather than watery.
- Gently press the gnocchi into the ragu – Don’t leave all the gnocchi sitting completely on top of the sauce. Press them gently into the ragu so they heat through and soak up the flavors as they bake. Leave some of the gnocchi exposed on top so they can become beautifully golden together with the cheese.
- Let the dish rest before serving – Once you remove the baking dish from the oven, let it rest for about 5 minutes. The sauce will thicken slightly, the flavors will settle, and the dish will be much easier to portion and serve.
Do I need to cook the gnocchi first?
No. For this recipe, the gnocchi are added directly to the prepared ragu and baked in the sauce. Just make sure to gently press them into the ragu so they soften properly while baking.
Storing and freezing
Let any leftover baked gnocchi cool completely, then transfer them to an airtight container or cover the baking dish tightly.
Refrigerating: Store in the refrigerator for up to 3 days. To reheat a larger portion, cover the baking dish loosely with foil and warm in a 180°C / 350°F oven for about 15–20 minutes, or until hot all the way through. Remove the foil for the last few minutes if you want the cheese to crisp up again. For a single portion, reheat in the microwave in 30–60 second intervals until steaming hot.
If you know you’ll be making the dish ahead of time, we recommend storing only the beef ragu separately and adding the gnocchi and cheese just before baking. This will give the gnocchi the best texture.
Freezing: For best results, freeze only the prepared beef ragu. Once completely cooled, divide it between freezer-safe containers or bags and freeze for up to 3 months.
Thaw overnight in the refrigerator, then reheat the ragu gently on the stovetop over medium-low heat until hot. Transfer it to a baking dish, add the gnocchi and cheese, and continue with the recipe as directed. This way, you can put together a delicious family meal with gnocchi much more quickly, even on days when you don’t have time for several hours of cooking.
