This is why you will adore this recipe
A great oven-baked chicken recipe should be simple, reliable, and full of flavor. What we love most about this one is that almost everything can be prepped right in the baking dish before it goes straight into the oven. Here’s why it works so well:
- the chicken stays juicy with beautifully golden, crispy skin
- the potatoes roast alongside the chicken and soak up all those flavorful pan juices
- the hands-on prep takes just about 10 minutes
- everything cooks together in one baking dish
- the vegetables add color, flavor, and extra juiciness
- it’s perfect for an easy family lunch or dinner
- the ingredients are simple and easy to find all year round
- it’s just as good for a relaxed Sunday lunch
Top 5 tips and tricks
Check out these five tips for making oven-baked chicken thighs with potatoes even easier at home.
1. Cut the potatoes into evenly sized pieces. This is one of the most important steps. If some pieces are much larger than others, the smaller ones may overcook while the larger ones are still firm. Pieces about 2 cm (3/4 inch) thick work well.
2. Keep the chicken on top. Don’t bury the chicken among the potatoes and vegetables. Arrange it on top of everything, skin-side up. This helps the skin brown more evenly while the vegetables underneath soak up all those flavorful chicken juices.
3. Use a large enough baking dish. Avoid overcrowding the pan. If everything is packed too tightly together, the potatoes and vegetables will steam rather than roast. A larger baking dish gives them more room to caramelize and brown.
4. Don’t skip the lemon juice. Lemon does more than add freshness. Its acidity balances the rich chicken juices, olive oil, and roasted potatoes, making the whole dish taste brighter and more balanced.
5. Keep the chicken skin exposed. For golden, lightly crispy skin, leave it uncovered for most of the roasting time. Only cover the chicken toward the end if you notice it browning too quickly.
Storing and freezing
Sheet Pan Chicken Thighs and Potatoes are best served fresh, while the chicken skin is still golden and crisp and the potatoes have the best texture.
If you have leftovers, let everything cool completely first. Transfer the chicken, potatoes, and vegetables to an airtight container and store in the refrigerator for up to 3 days.
For the best results, we recommend reheating in the oven. Transfer the chicken and vegetables to a baking dish and reheat at about 180°C / 350°F until heated through. This helps preserve the texture much better than reheating in the microwave.
You can also reheat the leftovers in a skillet over medium heat. If needed, add a tablespoon or two of water or chicken stock and cover the pan for a few minutes.
Freezing: You can freeze the cooked chicken, but potatoes often change texture after thawing and can become a little mealy. If you want to freeze the leftovers, we recommend freezing the chicken on its own, without the potatoes and vegetables.
