Storing and freezing

Let any leftover baked gnocchi cool completely, then transfer them to an airtight container or cover the baking dish tightly.

Refrigerating: Store in the refrigerator for up to 3 days. To reheat a larger portion, cover the baking dish loosely with foil and warm in a 180°C / 350°F oven for about 15–20 minutes, or until hot all the way through. Remove the foil for the last few minutes if you want the cheese to crisp up again. For a single portion, reheat in the microwave in 30–60 second intervals until steaming hot.

If you know you’ll be making the dish ahead of time, we recommend storing only the beef ragu separately and adding the gnocchi and cheese just before baking. This will give the gnocchi the best texture.

Freezing: For best results, freeze only the prepared beef ragu. Once completely cooled, divide it between freezer-safe containers or bags and freeze for up to 3 months.

Thaw overnight in the refrigerator, then reheat the ragu gently on the stovetop over medium-low heat until hot. Transfer it to a baking dish, add the gnocchi and cheese, and continue with the recipe as directed. METHOD

  • pan fry the beef

    Pat the beef cubes dry with paper towels and season lightly with salt and pepper. Place a large pot over high heat and add half of the olive oil. Sear the beef in two batches until well browned on all sides. Transfer the browned beef to a plate.

  • saute the veggies

    In the same pot, cook the vegetables. Add the finely chopped onion, celery, and red bell pepper. Cook for 8–10 minutes, stirring occasionally, until softened. Add the tomato paste and spices, and season with a little more salt and pepper if needed. Stir and cook for 1 minute.

  • add in the wine

    Pour in the red wine and use a wooden spoon to scrape up all the browned bits from the bottom of the pot. Cook for 2–3 minutes, until most of the alcohol has evaporated.

  • cook the ragu

    Return the seared beef to the pot and pour in the water or stock. Cover with a lid and cook over low heat for about 2 1/2 hours, or until the beef is very tender. Stir the ragu occasionally as it cooks.

  • cook the peas and carrots

    Cut the carrots into small cubes. About 20 minutes before the end of cooking, add them to the ragu together with the peas. Cook until the carrots are tender and the sauce is thick and rich. Season with additional salt and pepper to taste.

  • prepare the dish

    Place a rack in the middle of the oven and preheat to 190°C / 375°F. Transfer the beef ragu to a suitable baking dish and spread it out evenly. Arrange the potato gnocchi over the top and gently press them into the sauce.

  • add the cheese

    Sprinkle the grated cheese evenly over the gnocchi so it bakes into a golden, melted crust.

  • bake and serve

    Transfer the baking dish to the preheated oven and bake at 190°C / 375°F for about 25–30 minutes, or until the gnocchi are hot and tender and the cheese is melted and golden brown. Let the dish rest for 5 minutes before serving. Serve warm.
