caramelized onion
First, prepare the caramelized onions. Peel the onions and slice them thinly. Heat butter and oil in a pan. Add the onions and salt. Stir and cook over medium heat for about 5 minutes. Then reduce the heat and continue cooking for another 15 minutes, or until the onions are golden brown and soft. Remove from the heat and set aside.

pizza dough
Prepare a quick pizza dough or Neapolitan dough. In this recipe, I used a sourdough Neapolitan dough.

Pear and Prosciutto Pizza
Stretch the Neapolitan pizza dough on a floured surface. Spread ricotta over the dough, then add some caramelized onions and finely sliced pear. Top with freshly grated mozzarella. Carefully transfer the pizza with a peel into a pizza oven and bake for 1–2 minutes on high heat, until golden and crisp. Remove from the oven and top with prosciutto and fresh arugula. Sprinkle with sesame seeds and drizzle with olive oil. Slice and serve.
