cherries in wine
First, prepare the cherries in wine. Place the cherries (fresh or frozen) in a pan. Add sugar and red wine. Set over medium heat and bring the mixture to a boil. Let it simmer for about 5 minutes, stirring occasionally, until it thickens into a syrup. Then remove it from the heat.

chocolate mousse
For the chocolate mousse, pour the whipping cream into a saucepan and place it over heat. Bring it to a boil. Put the chopped chocolate or chocolate chips into a bowl and add a pinch of salt, if desired. Pour the hot cream over the chocolate and whisk until you get a smooth chocolate ganache. You can optionally add a splash of red wine for extra flavor.

chocolate mousse
To cool the chocolate ganache quicker, place some ice in a large bowl and set the bowl with the chocolate mixture on top of it. Stir with a spatula until it cools to room temperature, then gently fold in the whipped cream using circular motions. Pour into serving glasses and refrigerate for at least 1 hour — or even better, overnight for the perfect texture.

Preden postrežemo dekoriramo še z višnjami v vinu. Poljubno dodamo še nastrgano čokolado in stepeno sladko smetano.
