I’ve elevated this chocolate mousse with beautiful cherries in wine. However, if you prefer not to use alcohol or don’t like cherries, you can also top it with:

Storing

This 2-ingredient chocolate mousse tastes even better the next day.

Store the chocolate mousse by covering the container with plastic wrap and keeping it in the refrigerator for up to 3 days.

Place the cherries in wine in a tightly sealed container and store in the refrigerator for up to 1 week.

METHOD

  • cherries in wine

    First, prepare the cherries in wine. Place the cherries (fresh or frozen) in a pan. Add sugar and red wine. Set over medium heat and bring the mixture to a boil. Let it simmer for about 5 minutes, stirring occasionally, until it thickens into a syrup. Then remove it from the heat.

  • chocolate mousse

    For the chocolate mousse, pour the whipping cream into a saucepan and place it over heat. Bring it to a boil. Put the chopped chocolate or chocolate chips into a bowl and add a pinch of salt, if desired. Pour the hot cream over the chocolate and whisk until you get a smooth chocolate ganache. You can optionally add a splash of red wine for extra flavor.

    To cool the chocolate ganache quicker, place some ice in a large bowl and set the bowl with the chocolate mixture on top of it. Stir with a spatula until it cools to room temperature, then gently fold in the whipped cream using circular motions. Pour into serving glasses and refrigerate for at least 1 hour — or even better, overnight for the perfect texture.
