Spinach releases a lot of moisture as it cooks. If it is added to the mixture while still too wet, you will need to add more flour, which can make the gnudi denser.
  2. Do not add too much flour – The goal is to keep the gnudi soft and tender in the center. Flour is necessary to hold the mixture together, but do not add more than stated or needed. The gnudi mixture can be slightly softer than you might expect from classic potato gnocchi.

Freezing – The best option is to freeze gnudi before cooking. Arrange them on a tray so they do not touch and freeze until firm. Once completely frozen, transfer them to a freezer bag or airtight container. They can be stored this way for about 1 month.

There is no need to thaw them completely before cooking. Cook them directly from frozen, adding a little extra cooking time.

METHOD

  • blanch the spinach

    Wash the spinach. Place a skillet with olive oil over medium heat and add the spinach. Cook for about 1 minute, stirring regularly, until wilted. Drain well to remove any excess water, then finely chop the spinach.

  • shape the gnudi

    In a bowl, combine the ricotta, Skyr, egg yolks, egg, freshly grated Parmesan, salt, pepper, nutmeg, and all-purpose flour. Add the chopped spinach and mix well with a spatula until smooth and evenly combined. Using a spoon or a small ice cream scoop, portion the mixture into 26 dumplings.

  • shape the gnudi

    Add the semolina flour to a large plate or deep baking dish and gently coat the gnudi in the flour. Shape them into small dumplings with your hands. Refrigerate for at least 15 minutes, or up to 12 hours. Just before cooking, quickly reshape them if needed.

    Carefully lower the gnudi into a pot of salted boiling water. Cook for 4 minutes, then remove them with a slotted spoon.
