Every time I think of tomatoes, I think of my dad too. He’s a passionate gardener, especially when it comes to tomatoes. He pours all his energy and love into growing tomatoes. However, we only have about 10 plants at home, which isn’t enough for the whole family. Yup, we are big tomato lovers over here. So when we do buy them, we look for the best quality and buy them from our local producer called Lušt. This Roasted Tomato Soup is made with a mixture of tomatoes, and you can do the same. Use as many varieties as possible (but one is fine too); just make sure they are ripe, juicy, and naturally sweet. This is a lovely summer soup recipe, perfect for any day.

METHOD

  • preparation

    Place a rack in the middle of the oven and preheat it to 210 °C / 410 °F.

  • roast the tomatoes

    Clean the tomatoes and pat dry using a paper towel. Cut the large tomatoes in half and place them in a baking dish. Add the garlic, sugar, vinegar, bread cut into cubes (or breadcrumbs), and olive oil. Season with salt and pepper, and toss to combine. Place in the preheated oven to roast for 30 - 35 minutes at 210 °C / 410 °F or until the tomatoes are juicy and bursting.

  • serve

    Transfer the roasted tomatoes and other ingredients to a blender (or use an immersion blender). Add the water or vegetable broth. Blend into a thick, smooth soup and serve immediately.
