You can also store it in the freezer, in a freezer bag or other suitable container. In the freezer, it will keep for up to 1 month. Before freezing the plum dessert, allow it to cool completely. You can then cut it into pieces of any size (so you can take individual pieces from the bag) or freeze the whole cake.

METHOD

  • preparation

    Place the rack in the center of the oven and preheat it to 180 °C (350 °F). Grease a 26 cm (10-inch) round cake pan with butter and line the bottom with parchment paper.

    Wash the plums under running water, cut them in half, and remove the pits. Place them in a bowl, sprinkle with sugar and add some vanilla essence and set aside.

    In the bowl of a stand mixer or in a mixing bowl with an electric hand mixer, beat the butter, salt, sugar, and vanilla until creamy. While mixing continuously, add the eggs one at a time. Beat each egg well so it incorporates with the butter before adding the next. Add the baking powder and flour, then beat until you get a smooth batter. Finally, add the milk and mix briefly to combine.

    Using a spatula, spread the batter evenly over the bottom of the prepared pan. Arrange the plums on top with the cut side facing up and place in the oven. Bake for 10 minutes.

  • crumble

    In the meantime, while the cake is baking, prepare the crumble. In a bowl, combine both sugars, almonds, flour, and ground cinnamon, and a pinch of salt. Add the butter, cut into small cubes, and rub it together with the other ingredients using your fingertips until you get a crumbly, sandy mixture. It’s fine if there are a few larger clumps of dough.

  • bake

    Remove the plum cake from the oven and evenly sprinkle the crumble over the plums. Return it to the oven and bake for another 45 minutes.

  • serve

    When the cake is baked, remove it from the oven and set it aside to cool slightly. Cut into 12 pieces and serve. Optionally, dust with powdered sugar or serve with a scoop of vanilla ice cream.
