It’s one of those pizzas that looks like it came from a restaurant, yet you can make it in under 10 minutes. I love baking it when friends come over – partly because it pairs beautifully with wine, and partly because it always sparks a fun question: “Pear on pizza?” After the first bite, everyone’s convinced.

Storing and freezing

Pizza is, of course, always best when fresh. Some people also enjoy a slice later on, even cold. A great way to store it is by freezing. Once the pizza is baked, let it cool completely, then freeze it on a flat surface. Store it in a large freezer bag for up to 3 months.

We serve it by preheating the oven to 200 °C / 390 °F and taking the pizza out of the freezer 20 minutes before baking, then baking it for 10 minutes. In this case, do not add the prosciutto and arugula before freezing, but only right before serving.

METHOD

  • caramelized onion

    First, prepare the caramelized onions. Peel the onions and slice them thinly. Heat butter and oil in a pan. Add the onions and salt. Stir and cook over medium heat for about 5 minutes. Then reduce the heat and continue cooking for another 15 minutes, or until the onions are golden brown and soft. Remove from the heat and set aside.

    Prepare a quick pizza dough or Neapolitan dough. In this recipe, I used a sourdough Neapolitan dough.

  • Pear and Prosciutto Pizza

    Stretch the Neapolitan pizza dough on a floured surface. Spread ricotta over the dough, then add some caramelized onions and finely sliced pear. Top with freshly grated mozzarella. Carefully transfer the pizza with a peel into a pizza oven and bake for 1–2 minutes on high heat, until golden and crisp. Remove from the oven and top with prosciutto and fresh arugula. Sprinkle with sesame seeds and drizzle with olive oil. Slice and serve.
