Essential ingredients

For this simple brownie recipe, we will need 7 ingredients. We can get most, if not all, of the ingredients in a local store. It's essential to use high-quality chocolate and other ingredients.

Butter - use your favorite unsalted butter. We don't recommend using other fats.

Chocolate - it's super important to choose dark chocolate for this recipe. The cacao content should be 60% - 70%. If we were to use milk chocolate, the brownie would be too sweet, and the texture wouldn't be the same; it could fall apart.

Eggs - this recipe requires eggs to hold the brownie together.

Vanilla - adds a fantastic aroma. Add 1 tsp of vanilla paste or seeds from one vanilla pod.

Sugar - we tested this recipe with regular white sugar. If you plan on using brown sugar or cane sugar, the sugar content will be slightly higher to achieve the same consistency.

Flour - Use all-purpose flour for this brownie.

Below you can find the whole recipe with the ingredient list and method, and here we are sharing the tips and tricks to make the best Peanut Brownies at home.

  1. Always preheat the oven and grease the baking dish before baking. We sometimes do that right before the mixture should go into the oven, but that won't work in this recipe. The goal is to get the mix from the bowl to the oven as soon as possible.
  2. The ingredients should be at room temperature, and you should always stir the warm chocolate and butter mixture into the other ingredients. Half an hour before making the brownies, transfer all the refrigerated ingredients to room temperature. Also, when the chocolate and butter melt, stir them into the mixture while still warm (but not hot). This way, the ingredients will combine beautifully, and the butter won't separate.
  3. Whisk the eggs vigorously, but don't overwork the rest of the mixture. We don't want a stiff and dry brownie, so we shouldn't whisk or stir too much, just to combine.
  4. Don't let the mixture stand too long. When we have all the ingredients combined in a bowl, then pour the mixture into the prepared baking dish as soon as possible. If we were to leave the mixture to stand, the butter would begin to harden, which would result in buttery brownies.

Storing and freezing

Store these Peanut Brownies with White Chocolate in three different ways.

METHOD

    Place the rack in the middle of the oven and preheat it to 190 °C / 375 °F. Grease a 20 cm x 30 cm (8-inch x 12-inch) deep baking dish with butter and line with parchment paper with a few inches (or centimeters) of overhang off the sides.

    Add butter, chocolate, and a pinch of salt to a heat-proof bowl. Melt in intervals in your microwave oven, or place the bowl over a saucepan filled with boiling water (the bowl shouldn't touch the water) and melt the chocolate with butter. Set aside.

  • Combine eggs, chocolate, and flour

    In a large bowl, whisk together eggs, vanilla paste, and sugar using a whisk. Beat for 3 minutes by hand or use an electric mixer to get the mixture fluffy. Slowly pour the chocolate mixture into the egg mixture, whisking continuously with a whisk to get a smooth mixture. Then, gradually add in the flour while whisking with a whisk. Stir until combined and until there are no traces of flour left. Don't overwork the mixture.

    Roughly chop the Teta Frida Clusters - Peanuts in white chocolate with salted caramel. Alternatively, if you can't get them in your country, use a mixture of toffee peanuts and white chocolate chips. Stir into the mix and pour into the prepared baking dish. Bake for 25 - 30 minutes at 190 °C / 375 °F, or until the brownies are baked, but still soft. While cooling, the brownie will continue to bake and become moist and perfect. Set aside to cool, then cut into 12 slices and serve.
