Mmmm, cacao sandwich cookies. Brittle, not too sweet, crunchy. That kind of cookies that leave a beautiful aftertaste long after we ate the last bite. Oh and these have a beautiful rainbow of surprise in between each cacao cookie. Yes, today’s recipe is all about good, rich, creamy sandwich cookies, that are filled with wonderful new Marmela milk spreads. Two lovely Slovenians Uroš in Valentina made these spreads and presented them in a Slovenian show called “Štartaj Slovenija”, which basically means “Start Slovenia”. You know what seems like a great idea to me? Starting a cookie exchange club. Then at least we would have a fix cookie day once a month, with no worry that life will pass too fast for us to try all the delicious cookies this world has to offer. I truly believe cookies make this world a better place - at least Jernej always has a big, wide smile on this lovely face every time I bake homemade cookies. These little cuties were first meant to be Halloween cookies, but we are so excited about them that we decided to place them in more categories, such as “make them over the weekend cookies, make them during the week cookies and of course, make them for upocoming celebrations cookies”. They are made in just 60 minutes from start to finish and thanks to Marmela, all you have to do is basically bake the cacao cookies.

 

Cacao cookies are incredibly simple cookies, also eggless, which means crumbly, brittle and basically perfect for sandwich cookies. We used a very special filling for these cookies. The new Marmela spreads, that were presented to us, Slovenians in a show called Štartaj Slovenija. Behind the Marmela spreads are two lovely Sovenians, Uroš in Valentina from Vipavska dolina (honestly, such a beautiful place to visit too). Their products can be found in Interspar Slovenija. As we mentioned various times before, we truly admire people who give both their time, effort and money to create delicious products, that are local, high quality and made for us to enjoy our delicious foodie lives. To be completely honest we haven’t tried milk spreads before these, so we had none experience or expectations what so ever, but we were truly positively impressed by the freshness and rich taste of each main ingredient of the milk spread. We particularly liked the sweetness and freshness of the peach spread. These would also be great for any other cookie sandwiches, roulades and cake creams, pie or tart fillings.

All Marmela milk spreads are without any artificial coloring, flavor enhancers or artificial additives.

When are cacao cookies are baked and delicious, it’s time to fill them with your favorite filling. We used Marmela peach, Marmela pistachios and Marmela hazelnut milk spreads because they are such a lovely contrast to the cacao in the cookies. However, you can use any fillings or spreads you like, as long as they are similar in consistency (as seen on the photo) and of course, delicious.

Once our Cacao sandwich cookies with milk spread are done, it’s time for the best part. Serve them immediately or store them in an airtight container for up to three days in a fridge. These cookies are especially great for a variety of celebrations, for example Halloween, Christmas, New year’s eve, birthdays…They are not only delicious, but colorful too, that makes them more celebratory and special. As mentioned above, you can totally adapt the fillings to match your taste or the color of your party :) We wanted to celebrate Halloween, autumn, so we decided to go for more yellow, orange, green, brownies vibes. I personally love the peach milk spread, Jernej adores the hazelnut milk spread and we both love pistachios. METHOD

  • Prepare the cacao cookies

    In a small bowl combine all-purpose flour, salt, baking powder and unsweetened cacao powder. In a large bowl combine butter, sugar and vanilla sugar or vanilla essence. Using an electric mixer (or stand mixer) mix until fluffy and nice. Add the dry ingredients to the butter mixture and knead with your hands until the dough comes together.

  • Place in the fridge

    Wrap the cookie dough in cling film and place in the fridge for 30 minutes. Preheat your oven to 165 °C / 330 °F.

  • Bake the cacao cookies

    Using a cookie cutter (approx. 4cm or 5cm / 1.5-inch or 2-inch in diameter). You should get around 44 cookies, which means there will be 22 sandwich cookies. First cut out half of the cookies. Place the cookies on a baking sheet lined with parchment paper. Place in the oven and bake for 12 minutes at 165 °C / 330 °F. Remove the cookies from the oven and let them cool. Meanwhile cut out the rest of the 22 cookies and place in the oven to bake.

  • Fill the cookies wilk Marmela milk spread

    Add about one teaspoon of the Marmela milk spread in the center of a cookie, then cover the spread with a cookie to create a delicious cookie sandwich. We tried to create a lovely colorful sandwich cookie collection, so we used flavors peach, pistacio and hazelnut. Place the sandwich cookies on a nice plate and serve them or store them in an airtight container in the fridge for up to three days. Enjoy.

    Tip
    If you can't get the Marmela milk spreads, use any other milk spreads that you like.
