Top 5 tips and tricks

If you want to make perfectly juicy and flavorful pork tenderloin, we recommend following these five simple tips.

  1. Choose high-quality meat. The quality of the meat makes a big difference in the final dish. Look for fresh pork tenderloin with an even, pink color. Before cooking, remove any silver skin, as it is tough and won't soften during cooking.
  2. Pat the meat before searing. This small step makes a big difference. Use paper towels to thoroughly pat the pork tenderloin dry before cooking. If the surface is too wet, the meat will steam instead of sear, making it harder to achieve that beautiful golden-brown crust.
  3. Don't overcook the pork. One of the most common mistakes when cooking pork tenderloin is overcooking it. Because it's a lean cut of meat, it can quickly become dry and tough. We recommend using an instant-read meat thermometer for the best results. For safely cooked, juicy pork tenderloin, the internal temperature should reach 63°C (145°F) in the thickest part, followed by at least 3 minutes of resting. We prefer letting it rest for 5 minutes before slicing. If you prefer your pork more well-done, you can cook it a little longer, but keep in mind that it will be less juicy.
  4. Make the creamy sauce in the same skillet. After searing the pork, you'll notice delicious browned bits left at the bottom of the skillet. These are packed with flavor! We recommend preparing the cream sauce in the same skillet to capture all those wonderful flavors and create an even richer, more delicious sauce.
  5. Let the meat rest before serving with the sauce. Once the pork is cooked, let it rest for a few minutes before slicing. This allows the juices to redistribute throughout the meat, keeping it tender and juicy. If you're finishing the pork in the creamy sauce, make sure the sauce doesn't boil vigorously. Gentle simmering helps keep the meat tender while allowing all the delicious flavors to come together.

METHOD

  • prepare the meat

Pat the pork tenderloin dry with paper towels, then coat it evenly with mustard. Season with salt, pepper, and rosemary, making sure the meat is well coated on all sides.

  • sear the meat

Heat the oil in an oven-safe skillet over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 4–6 minutes. Transfer the skillet to a preheated oven at 200°C (390°F) and roast for approximately 10–12 minutes, or until the pork reaches your desired doneness. For juicy, safely cooked pork, the internal temperature should reach 63°C (145°F). Let the pork rest for 5 minutes before slicing to allow the juices to redistribute.

  • prepare the sauce

Transfer the pork tenderloin to a plate and add the finely chopped onion to the same skillet. Sauté briefly until softened, then pour in the sweet wine. Let it simmer for a few minutes to reduce, gently scraping the bottom of the skillet with a wooden spoon to release all the flavorful browned bits. Add the broth and cook for a few more minutes, until the sauce has reduced and thickened slightly.

  • finish the sauce

Add the herb cream cheese and stir until melted and fully incorporated into the sauce. Pour in the heavy cream, stir well, and simmer gently for another 2–3 minutes. Season with salt and freshly ground black pepper to taste.

  • serve

Slice the pork tenderloin into thick medallions and arrange them on a plate. Serve with your favorite side dish, such as crispy potato croquettes, and generously spoon the creamy sauce over the top.
