These crispy waffles are already considered as a breakfast fit for a king, for mornings when you have all the time in the world to just stop, enjoy your breakfast and be happy. We try to make these waffle mix one day ahead, as we are quite easygoing in the morning. If not, they are just as good if you make them 20 minutes before breakfast. Crisp on the outside and super tender on the inside. Not too sweet, since we often eat them with honey, which would make it all too sweet. But our favorite crisp waffles are serves with seasonal fruit and greek yogurt. Yummm, just delicious!

METHOD
    Set a saucepan over low heat. Add the milk and butter. Cook until the milk becomes lukewarm. The temperature should not go over 38°C / 100°F or it will kill the yeast.
    Combine the flour, baking powder, sea salt, brown sugar and yeast in a bowl. Pour over the lukewarm milk and butter mixture. Stir well. Add the egg and stir again. Set aside for at least 15 minutes or up to 6 hours on a room temperature. Preheat the waffle iron.

TIP

You can make the waffle mixture one day ahead, cover with plastic wrap and leave overnight in a refrigerator.
Serve
    Serve these lovely crisp waffles with seasonal fruit and a dollop of greek yogurt. Or serve with your favorite syrup, honey, caramel or chocolate.
