If we were to describe this recipe we might as well say this: Mix everything in a blender and serve. But we all know there's more to ice cream than just a simple recipe description. For example. When I crave ice cream, I want it NOW, not in 30 minutes, not in 4 hours and definitely not tomorrow. So having a quick fix recipe is an absolute must in my (online) cookbook. We always have ripe bananas in our kitchen, we always buy too many and we never eat them all. In winter those overripe bananas translate to banana bread but in summer, we need something more refreshing, like ice cream (just peel the bananas and freeze them ahead). And that's how this incredible treat was born. Bananas, peanut butter, hazelnuts and honey (which we often switch for maple syrup too). Easy, peasy, refreshing, naturally sweet and creamy.

Banana and Peanut Butter Ice cream
METHOD
One day ahead
    Peel your bananas and freeze them for at least one day (or up for a month).
Blend
    Cut the frozen bananas into small chunks. Place in a high quality blender or mixer. It's really important to have a good mixer for this recipe, or ice cream won't be as creamy and silky. Add peanut butter, hazelnuts, honey or maple syrup and pinch of salt. Blend until creamy, silky and delicious.
Serve
    Serve immediately or even better: Transfer to a container and freeze for at least one hour for an even better texture. Serve with your favorite topping. We like cacao nibs and coconut flakes or chocolate sauce. Enjoy. Store in a freezer for up to a week.
