Breakfast Granola with Cranberries and Poached Pears

Breakfast granola and yogurt. Such a classic combo, but this one has a very special addition: poached pears. Yum.

Breakfast Granola with Cranberries and Poached Pears
Sugar free September. Whole month without any sugar. Oh gosh, how we messed it up -.- What happened? Well, you know. Life happened. It was all perfect for the first nine days. No sugar in our diet, there were no cranky vibes in the atmosphere, it was all too good to be true. Then Jernej’s gradma’s 90th birthday came (bare in mind that I wrote cake instead of came when writing :)), and then we went on vacation and of course we had to eat pancakes since that’s our tradition and well, you get the memo. We were weak and we love food. But now, now we are back in action, and well, there are still a few days of September left and we will try to make up for it. Starting today with this beautiful and tasty breakfast without any added sugar. We have greek yogurt (you can also use any other plain yogurt), served with homemade granola, I am talking oats, cranberries and almonds and then for the grand finale: wine poached pears. Optionally you can of course add some honey before serving it, but we skipped that part this time. Quick, healthy, delicious and completely artificial sugar free.

METHOD

  • Poached pears

Put halved lemon, wine, water, rum, vanilla seeds and cinnamon stick to a saucepan. Optionally you can also add maple syrup. Place over medium - high heat and bring to a boil. Peel the pears, but keep them whole and with stalk intact. Add the pears to the saucepan and cook over low heat (low simmer) for about 10 minutes. Remove from the heat, cover with a lid and leave the pears to poach for at least one hour or even better, overnight. You can make these up to 2 days ahead and chill.

  • Granola

Place a skillet over medium - high heat. Add the rolled oats and toast them for about 2 - 3 minutes. Add the butter, dried cranberries and almond flakes. Lower the heat and cook for about 5 minutes or until the oats are golden and cranberries nice and soft.

  • Serve

Cut each pears in half lengthways. Serve the poached pear with greek yogurt and homemade granola. Optionally serve with poaching liquid and honey. Enjoy.
