<p>Mmm, we just had this lovely dish for lunch so I am still very much affected by this beautiful, light, seaside inspired sardines dish. I simply adore summer and light lunches and dinners. Everything seems to get a lot slower and simpler during summer time, which is exactly what we need right now. This is a simple, easy and very quick to make recipe. You only need a griddle pan (or a bbq), a few ingredients and that's it. Easy peasy. Lemon, parsley and garlic go great with sardines and you can serve them for lunch, dinner or appetizer. Enjoy.</p>
Chop the parsley. Peel and thinly slice cloves of garlic. Squeeze juice out of the lemon.
Place a griddle pan on a high heat. Once it's hot, add 1 tablespoon of olive oil and add the sardines. Grill them for about a minute or two on each side, depending on the size of the sardines. Transfer the grilled sardines to a plate, lined with a paper towel and continue to grill the remaining sardines.
In a small bowl mix the chopped parsley, sliced cloves of garlic, lemon juice and 5 tablespoons of olive oil. Season with sea salt and black pepper and serve with grilled sardines.
